Chore: upgrade dependencies

Problem

A lot of Atomic CRM dependencies are out of date / have security issues

Solution

I upgraded most of the dependencies.

Note: React cannot be upgraded to v19 due to the @nivo/core dependency

Note: I did not upgrade eslint as it would require a full rework of config files

How To Test

Pull changes, install new dependencies and test the app.

Additional Checks

• The documentation is up to date
• Tested with fakerest provider (see related documentation)
