Update and rename Jamschema_v1.yml to contrib/stephan.yml

Completing the example as a tester, not using funding information. This worked well, but I'm relatively familiar with YAML and metadata files, and was still working based on #47.

A few comments:

• In future validation, some decisions will probably have to be made re validity of things like the ORCID ID, which I have filled in according to the ORCID docs
• Some documentation beyond the schema and examples would be helpful :)
• Valid keys for things like affiliation PID type, and author roles could be defined, this is something that CFF is also interested in (Record contributor roles/contribution types citation-file-format/citation-file-format#112)
