Update simset conversion files to read out multiple energy bin sinograms

Modifies the file to convert SimSET data into STIR sinograms. Adds in additional conversion for energy binned sinograms with energy bins represented in file names for each photon. Note that the typo in Energy is in line with typo present in SimSET documentation and files and necessary for script to work.

Testing performed

Conversion script has worked on binned SimSET data.
