[nmfs-openscapes, *]: Update workshop and common infra

Note

This will change prod as well as the workshop, but there is very little functional difference.

This should be deferred until the date on the card (10th)

This PR does the following:

• Closes [Support] Workshop hub password change - NMFS Openscapes #6808
• Removes workshop-specific profiles in favour of lowering them to the common config
• Updates the common profile configuration to use the latest output
