How do I choose the number daemons?

Such a basic question, but how do i decide to choose the number of daemons to use? Would this fall in the number of cores -1 or something like that?

Yes, number of cores - 1 is the rule of thumb for the most optimal choice. Of course, if you know you're using cores to do other things then use fewer. Things will still work if you use 'too many', but it'll just be less efficient due to context switching at the OS level.
