Revise MedCalc-Bench version information in README

Updated README to reflect changes in MedCalc-Bench versions and recommendations.

-11/11/25 - We are in progress of updating v1.1 which cross validates the extractions and replaces notes which are more relevant for particular calculators. This shouldn't affact the LLMs performance, but it enhances the dataset further by providing notes that clinicans may be more likely to use.
