Switch to `pyside6` in the bundle

@DragaDoncila mentioned there's an interest in switching to pyside6 as the default Qt wrapper for the bundle. Seeing the progress in napari/napari#7887, this looks feasible.

Are there any other details I'm missing?

great job all.... i'm very much in favor of PySide6 due to licensing clarity.

I'm going to say, the "transition" from one to an other isn't easy.

Asking conda to "uninstall" certain packages is rather difficult, creating "lingering" unused packages that end up creating long term conflicts.

So documenting the transition in words is helpful to end users.

I think we should be close to this with napari/napari#7887 merged!
Personally, I think we should hold off updating the bundle to PySide6 until 1 release of napari just to see if we get some bug reports. It's really hard to catch everything...

I'll rename the issue title so we are clear it concerns the bundle only, and then we'll close once we update the constructor definitions.

So, in this time, we have had two napari releases: 0.6.3 and 0.6.4. Is it now the time to update to pyside6 or shall we wait for one more release cycle? @psobolewskiPhD

My first thought is that it's a great time to do so now. We have 0.6.5 next, and then 0.7.0.
So it would be nice for this final stability check in the packaging before 0.7

I'm sorry I totally dropped the ball on this. I was going to make some conda Pyside6 envs and some different plugins and check that everything is gucci but it slipped my mind.
Whatever we do we need the Pyside6 bundle out at least 1 release before we drop py310 (which drops pyside2).
