Request

A stage of loki.process should be able to drop existing structured metadata.

Use case

I'm using loki.source.api to retrieve logs from another Alloy instance. The sending Alloy instance sets structured metadata which I'd like to remove in the retrieving Alloy instance.

Currently there is no way to drop existing structured metadata (something similar to stage.label_drop).
