Subclass `Exception` for error categories

Try to distinguish between:

• User project errors related to exceptions that happen at runtime
• Configuration errors that happen when modifying or initializing a user project
• Internal errors that are the fault of AgentStack

The goal being to make Sentry logging easier to triage.
