[catalystproject-latam] Profile options don't have node selectors #6480

Context

While investigating https://github.com/2i2c-org/meta/issues/2329, I realized that the hubs in catalystproject-latam cluster don't have node selectors for the profile options they provide (I believe none of them).

Not having a node selector means they can gen scheduled on any available node, though I general I noticed that the smallest one gets created (though we've had some situation with binderhub-builder pods from what I remember).

What we need to do

We should set explicit node selectors and update profile options to match latest resource allocation script #6313.

Definition of Done

  • Setup node selectors for all profile options, and merge the PR
  • Reach out to the community letting them know that we plan to change the available profile options to match latest script and get their thumbs up
  • Update the profile options
  • The feature/service been tested with one or more users (if applicable)
  • The feature/service been deployed to a production cluster
  • Lessons learned have been documented
  • The feature has been communicated to our communities
